Xue Yan Gum Tragacanth 雪燕 100g

Cooking Method:

  1. Rehydrate the Xue Yan (3 grams per person) in water for at least 10 hours.
  2. The gum would become 20 times in its full volume. Then rinse the gum to remove the impurities.
  3. Boil the gum in low heat for 30 minutes. Do not boil more than 1 hour or the gum would completely dissolve.
