Description

HIGH PROTEIN FLOUR, or strong flour, is milled from hard grain wheat and has protein . The higher the flour's protein content, the greater the flour's gluten-forming potential in the dough, which then produces a bread loaf with good crumb structure. Hong Kong type steamed buns (bao), dumpling skin, Mooncake, Japanese cotton cheese cake, steamed cake, kuih bahulu, malay/nonya kuih, waffles and others where a specially soft and light texture is required.
