水仙粉(高筋面粉)(Hong Kong Flour)(High Protein Flour ) Per Pack 500g

HIGH PROTEIN FLOUR, or strong flour, is milled from hard grain wheat and has protein . The higher the flour's protein content, the greater the flour's gluten-forming potential in the dough, which then produces a bread loaf with good crumb structure.Hong Kong type steamed buns (bao), dumpling skin, Mooncake, Japanese cotton cheese cake, steamed cake, kuih bahulu, malay/nonya kuih, waffles and others where a specially soft and light texture is required.

又叫香港粉,一般用来做发糕,包子等,是经过细致漂白高筋的面粉,做好的糕点颜色洁白,不会呈黄色。

1、揉面的时候温水和牛奶应当以不烫手,低于35度为好。  2、香港粉又叫水仙粉,用它制作出来的点心颜色洁白,如果没有可用普通的特级粉制作。  3、发酵的时间不要太长了,不然面团容易变酸,最后做出来就是酸馒头了。  4、蒸馒头的水一定是冷水入锅,而且要醒发后才能开火。  5、蒸好后不能立即打开锅盖,不然一定会回缩。
