Coconut Chicken Soup with Conch Meat 椰子海螺鸡汤

Mildly sweet with a hint of umami flavour, this refreshing soup is commonly found in hotpot and chinese banquet restaurants! It’s a type of Chinese soup that is super nutritious, delicious and easy to make!

Ingredients Needed: 

  1. Morel Mushroom
  2. Conch Meat Slice (1-2 medium sized)
  3. 2 x Coconut (we recommend using the normal green coconut)
  4. 1/2 Chicken carcass
  5. Ginger Slices
  6. Aged Cooking Wine
  7. Coconut Meat
  8. Salt

Cooking Method:

  1. Soak the conch meat at least 30 minutes prior to cooking. Morel mushroom can be soaked 10 minutes prior as they do not take long to soften. 
  2. Cut the conch meat to smaller slices. 
  3. Place chicken carcass in a pot with water, add in some ginger slices and some aged cooking wine (we used our favourite Nv Er Hong in this recipe). Blanch for about 10 minutes. 
  4. Remove the chicken and place it in another pot with the coconut water. 
  5. Add in ginger slices, morel mushroom, conch meat, coconut meat and let it boil for another 45 minutes. 
  6. Add in some salt, pepper, and a dash of aged cooking wine before serving.
