Soba noodles are made from buckwheat flour and wheat flour and have a slightly nutty, earthy taste. They are best served with light sauce or soup. Adding to their ease in serving, soba is just as good served cold as it is hot. Cook them al dente to keep their slightly earthy chew. A few minutes boiling time is all you really need.
