炭火将收获的蒜头进行烟熏处理,致使蒜头的表皮形成棕黑色,俗称火蒜。经烟熏处理后蒜衣棕黑色,含水量低,耐储藏 。火蒜的质感带爽,不容易变软,香辣味浓,比新鲜的大蒜更“深刻”。 

火蒜的蒜衣有明显的腊肉香味,将其连皮一起生磨蒜茸,然后再去腌肉腌鱼,能增加特殊的风味。如果将火蒜放到石臼里连衣捣碎后,用滚油爆炒后放入生虾油泡大虾,会产生让人琢磨不透的香味。
