1. 西丁咸鱼沥水,稍微浸泡后沥干,在阳光下晒干减少水分,炸出来的西丁咸鱼特别漂亮。 油量末过西丁咸鱼。把油烧热后,西丁咸鱼入锅转中小火炸至熟透,金黄色。出锅前转中火,时间要注意好,烧焦。这个步骤可以减少油炸物的含油、更脆。(或可以炸2轮更脆)。炸好后沥干油、搁置待冷却后装罐储藏,
