Commonly used to replace dried scallops as its cheaper. Can be used to stir-fry, braise, or add them into soup. The clam meat will enhance the flavour of the soup, giving them a hint of sweetness.
Tip to remove piscine / fishy taste:
1) Rinse them under running water & soak for about 5 mins.
2) Marinate with aged cooking wine (yellow wine). 3) Cook with ginger & cooking wine.
