Tragacanth Gum is also known as Snow swallows (Xue Yan), is plant pith secretions from the plant Gum Tragacanth. Xue Yan got its name from its white thread-like texture, provides similar benefits as highly valued bird's nest.

Cooking Method:

  1. Rehydrate the Xue Yan (3 grams per person) in water for at least 10 hours.
  2. The gum would become 20 times in its full volume. Then rinse the gum to remove the impurities.
  3. Boil the gum in low heat for 30 minutes. Do not boil more than 1 hour or the gum would completely dissolve.
