Makes 12 pieces
- 12 pieces dried oyster, soaked for 3 hours. 12粒蚝豉泡3小时.
- 12 pieces of beancurd skin, cut into 5” squares. 腐皮,切成5″方块.
- 3 salted egg yolks, steamed and sliced. 3粒咸蛋黄蒸10分钟. 过后把咸蛋黄切成小片.
- 300 g minced pork (with 30% fat). 300克猪肉碎
- 200 g fish paste. 200克魚絞
- 3 tbsp water chestnut. 3 汤匙马蹄
- 1/4 tsp sugar. ¼ 茶匙糖
- 1/4 tsp white pepper. ¼茶匙白胡椒粉
- 1 tsp sesame oil. 1茶匙芝麻油
- 1 tbsp chopped coriander. 1汤匙香菜
- 1 tbsp chopped spring onions. 1汤匙葱
- Oil for frying. 普通油。
- Steam oysters for 10 minutes then fry in oil. 蚝豉蒸10分钟过后把蚝豉爆香。
- Place minced pork, fish paste, sugar, white pepper, coriander, and spring onions in a large bowl. Mix well. 将肉碎,魚絞,马蹄,葱,香菜，芝麻油，糖，和白胡椒粉加入碗中然后搅拌均匀。
- Lay one beancurd skin on a flat surface. Place 1 tbsp meat paste, 1 dried oyster, 2 slices of salted egg yolk, and cover with another 1 tbsp of meat paste. Roll into a tight cylinder。把肉团,咸蛋黄和蚝豉酿在腐皮里顺势卷好。
- Steam the oyster rolls for 10 min. Remove and set aside to cool. 蒸10分钟。
- Deep-fry oyster rolls until golden brown. 炸到金黄色。
- Slice oyster rolls into half and serve. 切成两半, 即可上碟。
